Warm weather, garden parties, day trips to the beach - these are just some of the things we love about summer. One addition that makes these plans truly great is that one (or two) refreshingly delicious cocktails that will quench your thirst during those warmer sunny days. 

Here are some of our favourite summer cocktails that you can try at home - then all you need to do is savour your tasty, cold creations and share them with your loved ones.

1. A Frozen Pimm’s

A frozen twist on the classic British tipple, perfect for sunny days.


200ml Pimm’s No.1
4 Large (or 8 small) strawberries
¼ Cucumber, sliced or cut into ribbons
500ml Lemon sorbet
Top up with Soda water
2 mint sprigs

How to make:

Build directly into 4 large glasses and pour 50ml of Pimm’s into each one, then divide the strawberries and cucumber equally between them. Put two scoops of lemon sorbet into each glass, top up with soda water and garnish with some fresh mint leaves. 

2. A Summer Treacle 

A fresh summer twist on your winter-friendly old fashioned.

50ml Dark rum
3 Dashes bitters
10ml Sugar syrup
20ml Fresh apple juice
Orange peel to garnish

How to make:

Combine the rum, bitters and syrup in a glass and fill with ice. Stir until the glass is chilled and gently pour the apple juice to the top. Garnish with a strip of orange peel and fresh mint leaves. 

3. A Southside

Refreshingly sophisticated.


35ml Tanqueray gin
20ml Fresh lime juice
20ml Sugar syrup
6-8 Fresh mint leaves
Top up with Soda water
2 mint sprigs

How to make:

Cover fresh mint leaves in sugar syrup in a cocktail shaker. Add Tanqueray and fresh lime juice. Shake well and pour into a cocktail glass over ice. Garnish with fresh mint sprig.
